Ingredients:

  • 6 large eggs
  • 120g cream cheese (softened)
  • 2 tbsp melted butter
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • Optional: 1 tbsp psyllium husk (for structure)

Instructions:

  1. Preheat oven to 160°C (320°F).
  2. Separate egg whites and yolks.
  3. Beat whites until stiff peaks form.
  4. In another bowl, mix yolks, cream cheese, butter, salt, and baking powder.
  5. Gently fold egg whites into the yolk mixture (don’t deflate it).
  6. Pour into greased ramekins or a small loaf pan.
  7. Bake for 25–35 minutes until golden brown.
  8. Cool before removing (this helps it firm up).
