Ingredients
- 5–6 ripe tomatoes, sliced
- 2 tbsp extra-virgin olive oil
- 1 tbsp fresh lemon juice
- 1 garlic clove, finely minced
- 1 tsp dried oregano
- ½ tsp black pepper
- ½ tsp sea salt
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped
- ½ tsp red pepper flakes, optional
- 1 tbsp toasted sesame seeds or everything seasoning, optional
Instructions
- Prepare the tomatoes:
Wash and slice the tomatoes into thick rounds or wedges. Arrange them in a serving bowl or on a large plate. - Make the dressing:
Whisk together olive oil, lemon juice, minced garlic, oregano, black pepper, and salt. - Season the tomatoes:
Drizzle the dressing evenly over the tomatoes. Sprinkle with parsley, basil, and optional red pepper flakes. - Add the topping:
Sprinkle a small amount of sesame seeds or your preferred seasoning blend over the top for extra texture. - Rest before serving:
Let the salad sit for 10–15 minutes so the tomatoes absorb the garlic, herbs, lemon, and olive oil. - Serve:
Serve fresh as a light side dish, appetizer, or alongside grilled chicken or fish.
🩸 Diabetes-Friendly Tip
