Step-by-Step Instructions
Step 1 — Prepare the Dough
In a large bowl, combine:
- flour
- salt
- sugar
- yeast (if using)
Mix well.
Add:
- warm milk
- egg
- oil
Begin mixing with your hand or a spoon.
Slowly add warm water until a soft dough forms.
Knead the dough for 8–10 minutes until:
- smooth
- elastic
- soft but not sticky
If sticky, add a little flour.
If too dry, add a spoonful of water.
Step 2 — Rest the Dough
Shape the dough into a ball.
Lightly oil the bowl and place dough inside.
Cover with:
- plastic wrap
or - a clean towel
Let it rest for:
- 45 minutes to 1 hour
The dough should become relaxed and slightly puffy.
Step 3 — Prepare the Butter Mixture
Mix:
- softened butter
- oil
This mixture helps create flaky layers similar to puff pastry.
Set aside.
Step 4 — Divide the Dough
Punch down the dough gently.
Divide into:
- 8 or 10 equal balls
Cover the dough balls and let them rest again for:
- 10–15 minutes
This makes rolling easier.
Step 5 — Roll Out the Dough
Take one dough ball.
Roll it into a very thin circle on a lightly oiled surface.
The thinner the dough, the more beautiful the layers will be.
Brush the surface generously with butter mixture.
Step 6 — Add Cheese
Sprinkle cheese evenly across the dough.
Do not overfill or the cheese may leak while cooking.
Optional additions:
- parsley
- black pepper
- chili flakes
Step 7 — Create the Layers
There are several ways to shape it.
Spiral Method (Recommended)
- Roll the dough into a long log.
- Coil the log into a spiral shape.
- Tuck the end underneath.
- Let rest for 5 minutes.
- Gently flatten with your hands or rolling pin.
This creates many flaky layers.
Step 8 — Cook the Flatbreads
Heat a skillet or griddle over medium heat.
Add a small amount of butter or oil.
Cook each flatbread for:
- 3–4 minutes per side
Flip several times if needed.
Cook until:
- golden brown
- crispy spots appear
- cheese melts
- layers puff slightly
Avoid high heat or the outside burns before the inside cooks.
Step 9 — Final Butter Brush
When cooked, brush lightly with melted butter.
Stack under a towel to keep soft.
