Ingredients

  • 1½ lbs (700 g) baby potatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¾ teaspoon salt, or to taste
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons grated Parmesan, optional
  • 1 teaspoon lemon juice, optional

1. Prepare the Potatoes

Wash and scrub the baby potatoes thoroughly. Cut them in half. If they’re larger, cut them into quarters so the pieces are similar in size.

Pat them very dry with paper towels. Removing excess moisture helps them become crispier.

2. Season

Place the potatoes in a large bowl.

Add olive oil, minced garlic, paprika, Italian seasoning, garlic powder, onion powder, black pepper, and salt.

Toss thoroughly until every potato is evenly coated.

3. Preheat the Air Fryer

Preheat your air fryer to 400°F (200°C) for about 3–5 minutes.

4. Air Fry

Place the potatoes in the air fryer basket in a single layer. Avoid overcrowding; cook in batches if necessary.

Air fry at 400°F (200°C) for 18–25 minutes.

Shake the basket after about 10–12 minutes to help the potatoes brown evenly.

Continue cooking until the potatoes are deeply golden and crispy on the edges and easily pierced with a fork.

5. Add the Finishing Touches

Transfer the hot potatoes to a serving bowl.

Sprinkle with fresh parsley and Parmesan, if using. For a little brightness, add a small squeeze of lemon juice.

Toss gently and serve immediately.

  • Dry the potatoes well before adding the oil.
  • Don’t overcrowd the air fryer basket.
  • Cut potatoes into similarly sized pieces so they cook evenly.
  • Shake the basket halfway through cooking.
  • For even crispier potatoes, soak cut potatoes in cold water for 20–30 minutes, then drain and dry them extremely well before seasoning.
