Ingredients
For the Strawberry Yogurt
- 2 cups (480 g) Greek yogurt or thick plain yogurt
- 1½ cups fresh strawberries, washed, hulled, and finely chopped
- 3–4 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- ½ cup heavy whipping cream, cold
- 2 tablespoons powdered sugar
- ½ cup finely chopped strawberries, for extra texture
For Garnishing
- 8–10 fresh strawberries, halved
- 2–3 whole strawberries
- Fresh mint leaves, optional
- A drizzle of honey, optional
👩🍳 Instructions
1. Prepare the Strawberries
Wash the strawberries and remove the green tops.
Finely chop about 1½ cups of strawberries. Place them in a bowl and gently mash about half of them with a fork. Leave some small pieces intact for texture.
Add the lemon juice and 1 tablespoon of honey. Stir and let the mixture sit for about 5–10 minutes.
This allows the strawberries to release some of their natural juices.
2. Prepare the Yogurt Mixture
Place the Greek yogurt in a large mixing bowl.
Add the remaining honey and vanilla extract. Stir until smooth and creamy.
Taste the mixture and add a little more honey if you prefer a sweeter dessert.
3. Whip the Cream
Pour the cold heavy cream into a separate bowl.
Add the powdered sugar and beat with an electric mixer until soft peaks form.
Be careful not to overbeat the cream.
4. Combine Everything
Gently fold the whipped cream into the yogurt mixture using a spatula.
Once combined, add the mashed and chopped strawberries.
Fold gently until the strawberries are distributed throughout the mixture.
Don’t overmix—the beautiful pink color should have some variation, with visible strawberry pieces and swirls.
5. Chill
Spoon the strawberry yogurt mixture into serving glasses or small dessert bowls.
Cover and refrigerate for at least 1–2 hours.
Chilling allows the dessert to become thicker and gives the strawberry flavor time to develop.
6. Garnish
Just before serving, top each glass with fresh strawberry halves.
For an extra attractive presentation, add a whole strawberry on top and a small mint leaf.
You can also drizzle a little honey over the top.
