I made it today with my own little tweaks and it is SO good! I present to you my Cajun faux-tato salad!
Sorry all, it took a little bit for this to get posted so I just saw all of this.

Ingredients


1 16 oz bag of frozen cauliflower, steamed and chopped
5 hard boiled eggs, chopped
4 strips cooked bacon, crumbled
Sliced green onion
~1.5 cups mayo
~3 tbs spicy brown mustard
Cajun seasoning to taste (or whatever spices you prefer)

Instructions

Put all ingredients in a large bowl and gently fold together until mixed.
Could add shredded cheese or other chopped veggies, but I didn’t.


This is ~4g carbs (2g net carbs) per 1 cup.
