Ingredients
- 1 cup sunflower seeds
- ½ cup flaxseeds
- ½ cup chia seeds
- ½ cup sesame seeds
- 1 cup mixed nuts (almonds, hazelnuts, or walnuts)
- 1½ cups rolled oats
- 1 tsp salt
- 1 tbsp honey or maple syrup (optional)
- 2 tbsp coconut oil or olive oil (melted)
- 1½ cups water
- Mix dry ingredients
In a large bowl, combine all seeds, nuts, oats, and salt. - Add wet ingredients
Stir in water, oil, and honey. Mix well until everything is fully coated. - Let it rest
Leave the mixture for 1–2 hours (or overnight). It will thicken as the chia and flax absorb water. - Shape
Line a loaf pan with parchment paper and press the mixture firmly into it. - Bake
- Preheat oven to 180°C (350°F)
- Bake for 20 minutes, then remove from pan, flip, and bake directly on rack for another 30–40 minutes
- Cool completely
This is crucial—let it cool before slicing so it holds together.
- Slice thinly—it’s very dense and filling
- Toast slices for best texture
- Store in fridge up to 1 week or freeze slices
