Ingredients:
- 4 large eggs (separated)
- 4 oz (115 g) cream cheese (softened)
- 2 tbsp almond flour
- 1/4 cup powdered erythritol (or preferred keto sweetener)
- 1/2 tsp vanilla extract
- 1/2 tsp cream of tartar
- 1/2 tsp baking powder
- Pinch of salt
Instructions:
- Preheat the oven: Preheat your oven to 300°F (150°C). Line a baking tray with parchment paper.
- Prepare egg whites: In a large mixing bowl, add the egg whites and cream of tartar. Beat with an electric mixer until stiff peaks form.
- Mix wet ingredients: In a separate bowl, mix the egg yolks, softened cream cheese, vanilla extract, almond flour, erythritol, baking powder, and a pinch of salt until smooth and creamy.
- Fold egg whites: Gently fold the beaten egg whites into the egg yolk mixture. Do this carefully to maintain the fluffy texture.
- Shape and bake: Spoon the mixture onto the lined baking tray in round cake shapes, smoothing the tops. Bake for 25-30 minutes or until golden brown and set.
- Cool and serve: Let the cakes cool completely before serving. Optional: dust with powdered erythritol or top with sugar-free whipped cream for an extra touch of sweetness.
