Ingredients:

  • 4 large eggs (separated)
  • 4 oz (115 g) cream cheese (softened)
  • 2 tbsp almond flour
  • 1/4 cup powdered erythritol (or preferred keto sweetener)
  • 1/2 tsp vanilla extract
  • 1/2 tsp cream of tartar
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions:

  1. Preheat the oven: Preheat your oven to 300°F (150°C). Line a baking tray with parchment paper.
  2. Prepare egg whites: In a large mixing bowl, add the egg whites and cream of tartar. Beat with an electric mixer until stiff peaks form.
  3. Mix wet ingredients: In a separate bowl, mix the egg yolks, softened cream cheese, vanilla extract, almond flour, erythritol, baking powder, and a pinch of salt until smooth and creamy.
  4. Fold egg whites: Gently fold the beaten egg whites into the egg yolk mixture. Do this carefully to maintain the fluffy texture.
  5. Shape and bake: Spoon the mixture onto the lined baking tray in round cake shapes, smoothing the tops. Bake for 25-30 minutes or until golden brown and set.
  6. Cool and serve: Let the cakes cool completely before serving. Optional: dust with powdered erythritol or top with sugar-free whipped cream for an extra touch of sweetness.
