Ingredients
- 1 lb Italian sausage
- 4 slices bacon, chopped
- 4 medium potatoes, diced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups chopped kale
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and black pepper, to taste
- ½ tsp red pepper flakes (optional)
Instructions
- In a large pot, cook the bacon until crispy. Remove and set aside.
- Add sausage and cook until browned, breaking it into small pieces.
- Add onion and garlic; sauté for 2–3 minutes.
- Pour in chicken broth and add diced potatoes. Simmer for 15–20 minutes, until the potatoes are tender.
- Stir in chopped kale and cook for 3–5 minutes.
- Reduce the heat and add heavy cream. Stir gently and season with salt, pepper, and red pepper flakes.
- Add the cooked bacon back into the soup and simmer for another 2 minutes. Serve hot.
Tip: For a lighter version, replace heavy cream with half-and-half. For a lower-carb option, reduce the potatoes and add extra kale.
Enjoy this warm, creamy, comforting soup!
