Chicken Fritter Recipe Ingredients

1 and 1/2 pounds of chicken breasts, three big

two big eggs

a third of a cup of mayo

To make it gluten-free, you may use 1/3 cup of cornstarch, potato starch, or all-purpose flour.

a quarter cup of shredded mozzarella cheese, four ounces

Fresh dill, chopped, 1 1/2 tablespoons

approximately half a teaspoon of salt, or more salt if desired

not a teaspoon of black pepper

a third of a cup of mayo

1 squeezed clove of garlic

Juice from half a tablespoon of lemon

one-fourth teaspoon of salt

Cheesy Chicken Nuggets Recipe

Put the chicken in a big mixing basin and cut it into 1/3-inch pieces using a sharp knife. A helpful hint: slice the chicken breast a bit easier if you partially freeze it.

Put the rest of the batter ingredients into the bowl and stir: 1 1/3 cups of shredded mozzarella, 2 eggs, 1/3 cup of mayonnaise, 1/3 cup of flour, 1 1/2 tablespoons of dill, 1/2 teaspoon of salt, and 1/8 teaspoon of black pepper, or more seasoning to taste. After mixing everything together, cover with plastic and put in the fridge for at least two hours, preferably overnight.

Put 2 tablespoons of oil into a big nonstick pan and set it over medium heat. The chicken mixture should be added to the heating oil in heaping tablespoonfuls. After a few minutes of sautéing uncovered, use the back of the spoon to slightly flatten the tops. After that, flip the chicken and continue sautéing for another three minutes, or until both sides are golden brown and the chicken is cooked through.* When making extra fritters, adjust the amount of oil according to your needs.

Make the aioli by combining all the ingredients in a measuring cup or small bowl and whisking until smooth, if using.

Remarks about the Recipe

*When chicken is done, you may check by slicing open a fritter; the interior should be fully white. Cook the chicken patties at a lower heat if they brown too quickly.
