Ingredients

For the Dough

  • 3 cups (375 g) all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast
  • 1 cup (240 ml) warm water
  • 2 tablespoons plain yogurt
  • 2 tablespoons olive oil or vegetable oil

For the Cheese Filling

  • 2 cups shredded mozzarella cheese
  • Β½ cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley
  • Optional: ΒΌ teaspoon garlic powder
  • Optional: pinch of black pepper

For Cooking

  • 2–3 tablespoons butter or oil

Instructions

Step 1: Prepare the dough

In a large mixing bowl, combine the flour, salt, sugar, and instant yeast.

Add the warm water, yogurt, and oil. Mix with a spoon until a rough dough forms.

Transfer the dough to a lightly floured surface and knead for approximately 8–10 minutes, until it becomes smooth and soft.

The dough should feel soft but not overly sticky.

Step 2: Let the dough rise

Place the dough in a lightly oiled bowl.

Cover it with a clean kitchen towel or plastic wrap and allow it to rest in a warm place for approximately 1 hour, or until it has doubled in size.

Step 3: Prepare the cheese filling

While the dough is resting, combine:

  • Mozzarella
  • Cheddar cheese
  • Chopped parsley
  • Garlic powder, if using
  • Black pepper, if using

Mix everything together.

The mozzarella gives the filling its delicious stretchy texture, while cheddar adds extra flavor.

Step 4: Divide the dough

Once the dough has risen, gently press out any large air bubbles.

Divide it into 6 equal pieces and roll each piece into a ball.

Cover the dough balls with a clean towel to prevent them from drying out.

Step 5: Fill the flatbreads

Take one dough ball and flatten it gently with your hands or a rolling pin.

Place approximately β…“ cup of the cheese mixture in the center.

Bring the edges of the dough up and over the filling, pinching them together tightly to seal the cheese inside.

Turn the filled dough seam-side down.

Step 6: Roll gently

Very gently roll the stuffed dough into a round flatbread about 6–7 inches wide.

Be careful not to roll too aggressively, as this can cause the cheese filling to break through the dough.

Repeat with the remaining dough and filling.

Step 7: Cook the flatbreads

Heat a large non-stick skillet over medium heat.

Add a small amount of butter or oil.

Place one or two flatbreads into the skillet, depending on the size of your pan.

Cook for approximately 3–4 minutes on the first side, until golden brown spots appear.

Flip carefully and cook for another 3–4 minutes.

The flatbread should become beautifully golden on both sides, while the cheese inside melts.

Step 8: Add the finishing touch

When the flatbreads are cooked, brush them lightly with melted butter.

Sprinkle with a little chopped parsley and, if desired, a small pinch of salt.

Serve immediately while the cheese is warm and melted.
