Ingredients

  • 2 cups broccoli florets, chopped
  • 1 red apple, diced
  • 1 cup lettuce, chopped
  • ½ cup cucumber, diced
  • ½ cup cherry tomatoes, halved
  • ½ cup sweet corn
  • ½ cup shredded carrots
  • ¼ cup red onion, chopped

For the creamy dressing:

  • ½ cup plain Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Wash and chop all the vegetables and apple.
  2. In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, salt, and pepper.
  3. Add broccoli, apple, lettuce, cucumber, tomatoes, corn, carrots, and red onion to a large bowl.
  4. Pour the dressing over the salad and toss gently until everything is coated.
  5. Refrigerate for 10–15 minutes, then serve fresh.

Tip: Use unsweetened Greek yogurt for a lighter, higher-protein dressing. For a diabetic-friendly version, omit the corn or use a smaller portion and avoid sweetened dressing.

Enjoy this fresh, crunchy, and creamy salad as a light lunch or a healthy side dish!
