Ingredients

For the Salad

  • 6 cups chopped romaine or iceberg lettuce
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 yellow bell pepper, diced
  • ½ small red onion, finely chopped
  • 3 hard-boiled eggs, chopped
  • ½ cup shredded cheddar cheese
  • 8 slices bacon, cooked until crispy and crumbled
  • ¼ cup fresh parsley, chopped
  • ½ teaspoon freshly ground black pepper

For the Creamy Dressing

  • ½ cup mayonnaise
  • ½ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 1–2 tablespoons water, if needed to thin

Instructions

  1. Cook the bacon:
    Fry the bacon in a skillet over medium heat until golden brown and crispy. Transfer to a paper towel-lined plate, let it cool, then crumble into small pieces.
  2. Prepare the eggs:
    Place the eggs in a saucepan, cover with water, and bring to a boil. Cook for about 10–11 minutes. Cool completely, peel, and chop.
  3. Chop the vegetables:
    Wash and dry the lettuce, cucumber, tomatoes, and bell pepper. Chop everything into bite-sized pieces. Finely chop the red onion and parsley.
  4. Make the dressing:
    In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, apple cider vinegar, Dijon mustard, garlic, onion powder, black pepper, and salt. Add a little water if the dressing is too thick.
  5. Combine the salad:
    Add lettuce, cucumber, tomatoes, bell pepper, red onion, eggs, and cheddar cheese to a large bowl or container.
  6. Add the dressing:
    Pour the creamy dressing over the vegetables and gently toss until everything is evenly coated.
  7. Add the bacon:
    Sprinkle the crispy bacon over the top. For the best crunch, reserve some bacon and add it immediately before serving.
  8. Chill:
    Cover and refrigerate for 20–30 minutes before serving. This allows the flavors to blend while keeping the vegetables relatively crisp.
  9. Serve:
    Toss gently once more and serve chilled as a hearty lunch, side dish, or light dinner.
