  • 4 large bell peppers (any color)
  • 1 pound ground beef (or ground turkey)
  • 1/2 cup diced onion
  • 1/2 cup diced zucchini
  • 1/2 cup diced mushrooms
  • 1 clove garlic, minced
  • 1/2 cup low-carb marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley or basil leaves for garnish (optional)


  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. Heat olive oil in a large skillet over medium heat. Add the diced onion, zucchini, mushrooms, and minced garlic. Cook until the vegetables are tender.
  4. Add the ground beef to the skillet and cook until browned. Season with salt, pepper, and Italian seasoning.
  5. Stir in the marinara sauce and simmer for a few minutes.
  6. Place the bell peppers in a baking dish. Spoon the meat and vegetable mixture into the peppers, filling them evenly.
  7. Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the tops of the peppers.
  8. Cover the baking dish with foil and bake for about 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  9. Remove from the oven and let them cool for a few minutes.
  10. Garnish with fresh parsley or basil leaves, if desired, before serving.
