Ingredients
2 large cucumbers, peeled and chopped
1 cup fresh lemon juice (about 4–6 lemons)
½ to ¾ cup sugar or honey (adjust to taste)
3 cups cold water or sparkling water
1–2 cups ice cubes
6–8 fresh mint leaves (optional)

Instructions
1. Blend the Cucumber
Add chopped cucumbers to a blender with ½ cup water.
Blend until completely smooth.
2. Strain (Optional)
Pour cucumber puree through a fine mesh strainer into a pitcher for a smoother drink.
Press with a spoon to extract all liquid.
3. Mix the Lemonade
Add fresh lemon juice to the pitcher.
Stir in sugar or honey until fully dissolved.
Add remaining cold water and mix well.
4. Chill
