Fantastic Garlic Flatbreads with Lentils & Kale

Ingredients:
For the Garlic Flatbreads:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cloves garlic, minced
- 1/2 cup warm water
- 2 tablespoons olive oil
For the Lentils & Kale:
- 1 cup dried green lentils
- 2 cups vegetable broth
- 2 cups chopped kale
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
- Prepare the Garlic Flatbreads:
- In a mixing bowl, combine the flour, baking powder, salt, and minced garlic.
- Gradually add warm water and olive oil to the dry ingredients, mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Divide the dough into 4 equal portions.
- Roll out each portion into a thin round flatbread.
- Heat a skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden brown spots appear. Set aside.
- Cook the Lentils & Kale:
- Rinse the lentils under cold water and drain.
- In a saucepan, bring vegetable broth to a boil. Add the lentils, reduce heat, cover, and simmer for about 15-20 minutes or until lentils are tender.
- In a separate skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add chopped kale to the skillet and sauté until wilted, about 3-4 minutes.
- Once the lentils are cooked, drain any excess liquid and add them to the skillet with kale. Season with salt and pepper to taste.
- Assemble:
- Place a portion of the lentil and kale mixture on each garlic flatbread.
- Serve hot and enjoy!
