Fantastic Garlic Flatbreads with Lentils & Kale

Ingredients:

For the Garlic Flatbreads:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced
  • 1/2 cup warm water
  • 2 tablespoons olive oil

For the Lentils & Kale:

  • 1 cup dried green lentils
  • 2 cups vegetable broth
  • 2 cups chopped kale
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Garlic Flatbreads:
    • In a mixing bowl, combine the flour, baking powder, salt, and minced garlic.
    • Gradually add warm water and olive oil to the dry ingredients, mixing until a dough forms.
    • Knead the dough on a floured surface for about 5 minutes until smooth. Divide the dough into 4 equal portions.
    • Roll out each portion into a thin round flatbread.
    • Heat a skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden brown spots appear. Set aside.
  2. Cook the Lentils & Kale:
    • Rinse the lentils under cold water and drain.
    • In a saucepan, bring vegetable broth to a boil. Add the lentils, reduce heat, cover, and simmer for about 15-20 minutes or until lentils are tender.
    • In a separate skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
    • Add chopped kale to the skillet and sauté until wilted, about 3-4 minutes.
    • Once the lentils are cooked, drain any excess liquid and add them to the skillet with kale. Season with salt and pepper to taste.
  3. Assemble:
    • Place a portion of the lentil and kale mixture on each garlic flatbread.
    • Serve hot and enjoy!
