Things you need
1 cup of chickpeas that have been cooked
2 medium potatoes, boiled and then mashed
2 tablespoons of finely chopped onion
1 clove of garlic, chopped up
2 tablespoons of chopped fresh cilantro or parsley
1/2 teaspoon of paprika
1/2 teaspoon of cumin
Add salt and black pepper to taste.
2–3 tablespoons of breadcrumbs or oat flour
2 tablespoons of olive oil for frying
To make a quick avocado side:
1 avocado that is ripe
1 tsp of lemon juice
A pinch of salt
How to do it
Using a fork, mash the chickpeas in a bowl until they are mostly broken down but still have some chunks.
Add the mashed potatoes, onion, garlic, parsley, paprika, cumin, salt, and pepper to the mix. Put everything together.
Add the breadcrumbs to help the mixture stay together. Add a little more if it feels too soft.
With your hands, shape the mixture into small, round patties.
Put olive oil in a skillet and heat it over medium heat.
Cook the patties for 3 to 4 minutes on each side, or until they are golden brown and crispy.
While they cook, mash the avocado with some lemon juice and a little salt.
Put the avocado mash on the side and serve the warm patties. They make a great snack, light lunch, or even a sandwich filling.
