Ingredients

  • 1 lb (450 g) fresh carrots
  • 1 cup white vinegar or apple-cider vinegar
  • ½ cup water
  • ¼ cup honey
  • 3–4 garlic cloves, peeled and lightly smashed
  • 1–2 tsp red chili flakes
  • 1 tsp black peppercorns
  • ½ tsp mustard seeds
  • ½ tsp coriander seeds
  • 1 tsp salt
  • 1 small dried red chili, optional
  • 1 bay leaf, optional

👩‍🍳 Instructions

1. Prepare the carrots
Wash and peel the carrots. Cut them into thick sticks or batons, roughly 3–4 inches long. Keeping them fairly thick helps them remain crunchy.

2. Prepare the jar
Use a clean glass jar with a tight-fitting lid. Add the garlic, black peppercorns, mustard seeds, coriander seeds, chili flakes, and bay leaf to the bottom.

3. Make the pickling liquid
Add the vinegar, water, honey, and salt to a saucepan. Heat over medium heat, stirring until the honey and salt dissolve. Bring the mixture to a gentle simmer, then remove it from the heat. Similar recipes use a hot vinegar brine poured directly over the carrots.

4. Pack the carrots
Place the carrot sticks vertically into the jar, packing them fairly tightly but leaving enough room for the liquid to circulate.

5. Add the brine
Carefully pour the hot pickling liquid into the jar until the carrots are completely covered. Leave a little space at the top.

6. Remove air bubbles
Tap the jar gently on a towel-covered counter or use a clean utensil to release trapped air bubbles. Make sure the carrots remain submerged.

7. Cool and refrigerate
Allow the jar to cool to room temperature, then seal it and place it in the refrigerator.

8. Let the flavors develop
You can taste them after about 24 hours, but the flavor becomes much better after several days. Some traditional versions recommend waiting around 1–2 weeks for a deeper pickle flavor.

🌶️ Adjust the Heat

  • Mild: ½ tsp chili flakes
  • Medium: 1 tsp
  • Spicy: 2 tsp
  • Extra spicy: Add a sliced fresh chili or dried red chili

🧊 Storage

Keep these as refrigerator pickles and keep the carrots completely submerged in the brine. For long-term shelf-stable storage, use a tested canning recipe and proper water-bath processing rather than relying on a refrigerator-pickle recipe.
