Ingredients

For the Biscuits

  • 2 cups (250 g) all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • ½ cup (113 g) cold unsalted butter, cubed
  • ¾ cup (180 ml) cold buttermilk, plus 1–2 tablespoons if needed
  • 1 tablespoon melted butter, for brushing

For Serving

  • Softened butter, as desired
  • ½–¾ cup your favorite jam or preserves

Instructions

1. Prepare the Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

2. Mix the Dry Ingredients

In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

3. Cut in the Butter

Add the cold cubed butter. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.

A few small pieces of butter should remain. These help create flaky layers.

4. Add the Buttermilk

Pour in the cold buttermilk and gently stir with a fork or spatula until the dough just comes together.

Don’t overmix. The dough should look slightly shaggy rather than perfectly smooth.

5. Fold the Dough

Transfer the dough onto a lightly floured surface. Gently pat it into a rectangle about ¾-inch thick.

Fold the dough in half, then gently pat it out again. Repeat 2–3 times to create flaky layers.

6. Cut the Biscuits

Pat the dough to approximately ¾–1 inch thick.

Use a 2½-inch round biscuit cutter to cut out the biscuits. Press the cutter straight down rather than twisting it.

Place the biscuits close together on the prepared baking sheet.

7. Bake

Brush the tops lightly with melted butter.

Bake for 12–15 minutes, or until the biscuits are puffed and golden brown on top.

8. Add Butter & Jam

Let the biscuits cool for a few minutes, then carefully split them while warm.

Spread with soft butter and a generous spoonful of your favorite jam.
