Ingredients
For the Biscuits
- 2 cups (250 g) all-purpose flour
- 1 tbsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- ½ cup (115 g) cold unsalted butter, cubed
- ¾ cup (180 ml) cold buttermilk
- 1 tsp sugar, optional
For the Sausage Gravy
- 1 lb (450 g) breakfast sausage
- ¼ cup (30 g) all-purpose flour
- 2½ cups (600 ml) whole milk
- ½ tsp salt, or to taste
- 1 tsp freshly ground black pepper
- ¼ tsp garlic powder
- ¼ tsp onion powder
- Pinch of cayenne pepper, optional
- 1 tbsp butter, if needed
Instructions
1. Make the Biscuits
- Preheat the oven to 425°F (220°C).
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
- Add the cold cubed butter.
- Use your fingertips or a pastry cutter to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
- Pour in the cold buttermilk and gently stir until a soft dough forms.
- Turn the dough onto a lightly floured surface and gently knead it 4–5 times. Avoid overworking it.
- Pat the dough to about ¾-inch (2 cm) thickness.
- Cut out biscuits using a round cutter.
- Place them close together on a baking sheet.
- Bake for 12–15 minutes, until puffed and golden brown.
🌭 2. Make the Sausage Gravy
- Heat a large skillet over medium heat.
- Add the breakfast sausage and cook for 6–8 minutes, breaking it into small pieces as it browns.
- Leave the sausage and its flavorful drippings in the skillet. If the pan is very dry, add 1 tablespoon of butter.
- Sprinkle the flour evenly over the sausage.
- Stir continuously for about 1–2 minutes to cook the flour.
- Slowly pour in the milk while stirring constantly to prevent lumps.
- Add salt, black pepper, garlic powder, onion powder, and cayenne if using.
- Bring the mixture to a gentle simmer.
- Cook for 5–8 minutes, stirring frequently, until the gravy becomes thick and creamy.
3. Serve
Split the warm biscuits in half and place them on plates.
Spoon a generous amount of hot sausage gravy over the biscuits. Finish with extra freshly cracked black pepper.
