Ingredients

3 cups (375 g) all-purpose flour
1 teaspoon salt
1 tablespoon sugar
2 teaspoons instant yeast
1 cup (240 ml) warm water
¼ cup (60 ml) plain yogurt

3 tablespoons melted butter

  1. Activate the Dough

Add the warm water, sugar, and instant yeast to a large mixing bowl.

Stir gently and let it sit for about 5 minutes.

The water should be warm but not hot. Very hot water can damage the yeast.

Add the yogurt and olive oil and mix well.

  1. Make the Dough

Add the flour and salt gradually.

Mix with a wooden spoon or your hands until a soft dough begins to form.

Transfer the dough to a lightly floured surface.

Knead for approximately 7–10 minutes.

The dough should become smooth, soft, and slightly elastic.

If it feels extremely sticky, add flour one tablespoon at a time. Avoid adding too much flour because a soft dough produces much softer flatbreads.

  1. Let the Dough Rise

Lightly grease a clean bowl with a little oil.

Place the dough inside and turn it once so the surface is lightly coated.

Cover with plastic wrap or a clean kitchen towel.

Place it somewhere warm and allow it to rise for approximately 60–90 minutes, or until it has roughly doubled in size.

The rising time can vary depending on room temperature.

  1. Prepare the Garlic Herb Butter

While the dough is rising, prepare the topping.

Melt the butter in a small bowl.

Add minced garlic, parsley, cilantro, salt, black pepper, and oregano.

For a little heat, add red pepper flakes.

Mix everything together and set aside.

The garlic and herbs will infuse the melted butter with a rich, aromatic flavor.

  1. Divide the Dough

Once the dough has doubled in size, gently press it down to release excess air.

Transfer it to a lightly floured surface.

Divide the dough into 6–8 equal pieces, depending on how large you want your flatbreads.

Shape each piece into a smooth ball.

Cover the dough balls with a clean towel and let them rest for another 10–15 minutes.

This resting period makes the dough much easier to roll.

  1. Roll the Flatbreads

Take one dough ball and lightly dust it with flour.

Roll it into a round or oval shape approximately ¼ inch thick.

Don’t worry about making every flatbread perfectly circular. A slightly rustic shape gives homemade flatbread a beautiful appearance.

Repeat with the remaining dough.

Keep the rolled pieces covered so they don’t dry out.

  1. Cook the Flatbread

Heat a heavy skillet or nonstick pan over medium-high heat.

Lightly brush the pan with a small amount of butter or oil.

Place one flatbread into the hot pan.

Cook for approximately 1–2 minutes, until bubbles begin forming on the surface and the underside develops golden-brown spots.

Flip it carefully.

Cook the second side for another 1–2 minutes.

You should see beautiful golden patches develop across the surface.

  1. Add the Garlic Butter

As soon as the flatbread comes out of the pan, brush it generously with the prepared garlic herb butter.

The heat from the bread will melt the butter into the surface and release the wonderful aroma of fresh garlic and herbs.

Repeat with all remaining flatbreads.

For an extra-soft texture, stack the cooked flatbreads on a plate and cover them with a clean kitchen towel.

The trapped steam will keep them soft and flexible.

🧄 Extra-Garlic Version

If you love garlic, increase the topping to:

4–5 garlic cloves
4 tablespoons butter
3 tablespoons fresh parsley
1 tablespoon cilantro

You can also add a small pinch of chili flakes for a spicy garlic-butter flavor.
