Ingredients:
- 2 lbs beef chuck, cut into cubes
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup dry red wine (optional)
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup turnips, chopped
- 1 cup radishes, chopped
- 1 tbsp arrowroot powder (optional)
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Add the beef cubes and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
- Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.
- Add the beef broth, red wine (if using), bay leaves, thyme, rosemary, salt, and black pepper to the pot. Stir to combine.
- Add the carrots, celery, turnips, and radishes to the pot. Stir to combine.
- Return the beef cubes to the pot and stir to combine.
- Bring the stew to a boil, then reduce the heat to low and cover the pot. Simmer for 2-3 hours, stirring occasionally, until the beef is tender.
- If you prefer a thicker stew, mix 1 tablespoon of arrowroot powder with 1 tablespoon of water and stir into the stew. Cook for an additional 10-15 minutes to thicken.
