  • 2 lbs beef chuck, cut into cubes
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup dry red wine (optional)
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup turnips, chopped
  • 1 cup radishes, chopped
  • 1 tbsp arrowroot powder (optional)


  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  2. Add the beef cubes and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
  3. Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.
  4. Add the beef broth, red wine (if using), bay leaves, thyme, rosemary, salt, and black pepper to the pot. Stir to combine.
  5. Add the carrots, celery, turnips, and radishes to the pot. Stir to combine.
  6. Return the beef cubes to the pot and stir to combine.
  7. Bring the stew to a boil, then reduce the heat to low and cover the pot. Simmer for 2-3 hours, stirring occasionally, until the beef is tender.
  8. If you prefer a thicker stew, mix 1 tablespoon of arrowroot powder with 1 tablespoon of water and stir into the stew. Cook for an additional 10-15 minutes to thicken.
  9. Serve hot and enjoy your Keto Rustic Beef Stew!

Note: You can also add other vegetables that fit into a ketogenic diet, such as cauliflower or broccoli.
