- 2 cups cooked chicken breast, finely chopped
- 1 cup shredded mozzarella cheese
- 2 eggs
- 3 tbsp all-purpose flour
- 2 tbsp mayonnaise
- 2 cloves garlic, minced
- 2 tbsp fresh parsley or dill, chopped
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt, or to taste
- 3 tbsp olive oil, for frying
Instructions
- Prepare the mixture: In a large bowl, combine the chopped chicken, mozzarella, eggs, flour, mayonnaise, garlic, herbs, paprika, salt, and black pepper.
- Mix well: Stir until everything is evenly combined and the mixture holds together.
- Shape the fritters: Scoop small portions of the mixture and flatten them into patties.
- Heat the oil: Warm the olive oil in a skillet over medium heat.
- Fry until golden: Cook the fritters for 3–4 minutes per side until crispy and golden brown. Make sure the centers are thoroughly heated.
- Drain and serve: Transfer to a paper towel-lined plate and garnish with fresh dill or parsley.
Tips for Best Results
- Chop the chicken finely so the fritters hold together.
- Avoid overcrowding the pan to help them crisp evenly.
- Serve with garlic yogurt sauce, ranch dressing, or a fresh salad.
- For an air fryer version, cook at 190°C (375°F) for 10–14 minutes, flipping halfway and lightly spraying with oil.
