Ingredients
For the Oat Layer
- 3 cups rolled oats
- 1 cup creamy peanut butter
- ½ cup honey or maple syrup
- ¼ cup coconut oil or melted butter
- 1 teaspoon vanilla extract
- Pinch of salt
For the Chocolate Layer
- 1½ cups chocolate chips or chopped chocolate
- 1 tablespoon coconut oil or butter
Optional Topping
- ½ cup additional rolled oats
- 2 tablespoons honey or maple syrup
- 2 tablespoons peanut butter
Instructions
Step 1: Prepare the pan
Line an 8×8-inch baking pan with parchment paper or foil. Leave some paper hanging over the sides to make it easier to remove the bars later.
Step 2: Make the oat mixture
In a large saucepan over low heat, combine:
- Peanut butter
- Honey or maple syrup
- Coconut oil or butter
Stir continuously until everything melts together and becomes smooth.
Remove from the heat and stir in the vanilla extract and salt.
Step 3: Add the oats
Add the rolled oats to the warm peanut butter mixture.
Stir well until every oat is completely coated and the mixture becomes thick and sticky.
Step 4: Press into the pan
Transfer the oat mixture to your prepared baking pan.
Use the back of a spoon or spatula to press the mixture down firmly and evenly. A tightly packed base will help the bars hold their shape when sliced.
Step 5: Melt the chocolate
Add the chocolate chips and coconut oil to a microwave-safe bowl.
Heat in 20–30 second intervals, stirring after each interval, until the chocolate is completely smooth.
You can also melt the chocolate using a double boiler.
Step 6: Add the chocolate layer
Pour the melted chocolate over the oat base.
Use a spatula or spoon to spread it evenly across the surface.
Step 7: Add the oat topping
For extra texture, mix the additional oats with honey and peanut butter.
Sprinkle or spoon the mixture over the melted chocolate layer, gently pressing it into the chocolate.
Step 8: Chill
Place the pan in the refrigerator for at least 2–3 hours, or until the chocolate is firm and the bars are easy to slice.
Step 9: Slice and serve
Remove the chilled mixture from the pan using the parchment paper.
Allow it to sit at room temperature for about 5 minutes, then cut into squares or rectangular bars.
For the best presentation, drizzle a little extra melted chocolate over the finished bars.
