Ingredients

For the Base

  • 2 cups mixed nuts (almonds, peanuts, cashews, or walnuts), roughly chopped
  • 1 cup raisins or dried cranberries
  • 1 cup crushed biscuits or rolled oats
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Chocolate Topping

  • 1 1/2 cups milk or dark chocolate chips
  • 2 tablespoons coconut oil or butter

Instructions

1. Prepare the Pan

  • Line an 8×8-inch square pan or tray with parchment paper.

2. Make the Base

  • In a large bowl, combine:
    • chopped nuts
    • raisins
    • crushed biscuits or oats
  • In a small saucepan over low heat, warm:
    • peanut butter
    • honey
    • vanilla
    • salt
  • Stir until smooth.

3. Combine

  • Pour the warm mixture into the dry ingredients.
  • Mix well until everything is coated evenly.

4. Press into the Pan

  • Transfer the mixture to the prepared pan.
  • Press down firmly using the back of a spoon or a flat glass.

5. Make the Chocolate Layer

  • Melt the chocolate chips and coconut oil together:
    • either in the microwave (30-second intervals)
    • or using a double boiler.
  • Stir until smooth.

6. Add Topping

  • Pour melted chocolate over the base.
  • Spread evenly with a spatula.
  • Decorate with extra almonds or dried fruit if desired.

7. Chill

  • Refrigerate for 2–3 hours until firm.

8. Slice & Serve

  • Cut into bars or squares.
  • Store in an airtight container in the fridge for up to 1 week.
