Ingredients

  • 3 cups (360 g) all-purpose flour
  • 1 cup (240 g) plain yogurt
  • ½ cup (120 ml) warm water
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast (or 1 packet)
  • 2 tablespoons olive oil
  • Butter (optional, for brushing)
  1. In a bowl mix:
    • warm water
    • sugar
    • yeast
  2. Let it sit 5–10 minutes until foamy.
  1. Add yogurt, olive oil, salt, and flour.
  2. Mix until a soft dough forms.
  3. Knead for 8–10 minutes until smooth and slightly elastic.
  1. Place dough in a lightly oiled bowl.
  2. Cover and let rise 45–60 minutes until doubled in size.
  1. Divide dough into 6–8 balls.
  2. Roll each ball into a 15–18 cm (6–7 inch) round about ½ cm thick.
  1. Heat a dry skillet or griddle over medium heat.
  2. Cook each flatbread 2–3 minutes per side.
  3. It should puff and get golden brown spots.

Brush with melted butter while warm for extra flavor.
