Ingredients

  • 250 g ground sausage or beef mince
  • 2 cups all-purpose flour
  • 2 eggs
  • ¾ cup milk
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup melted butter
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 2 tbsp chopped spring onions
  • 1 tbsp chopped parsley
  • 2 tbsp cooking oil

Instructions

1. Cook the meat: Heat oil in a pan. Add sausage or mince, black pepper, garlic powder and salt. Cook until browned. Drain excess oil.

2. Prepare the batter: In a bowl, mix flour and baking powder. In another bowl, whisk eggs, milk and melted butter.

3. Combine: Pour the wet ingredients into the dry ingredients. Mix gently until combined.

4. Add filling: Fold in cooked meat, half of the mozzarella, half of the cheddar and spring onions.

5. Fill muffin tin: Grease a muffin tray and divide the mixture into 6 large muffin cups.

6. Add cheese: Sprinkle the remaining mozzarella and cheddar generously on top.

7. Bake: Bake at 190°C (375°F) for 20–25 minutes, until golden brown and cooked through.

8. Garnish: Sprinkle chopped spring onions over the hot muffins.

Tips for best results

  • Use mozzarella for a stretchy cheese topping.
  • Add cheddar for a richer flavour.
  • Don’t overmix the batter; it keeps the muffins soft.
  • Let muffins rest for 5 minutes before removing.
  • For extra flavour, add a little paprika or chilli flakes.
