Ingredients:
1 box yellow cake mix1 cup pecans, chopped + 1/2 cup whole pecans for topping1 cup unsalted butter, melted (2 sticks)4 large eggs1 cup light corn syrup1 cup brown sugar1 tsp vanilla extract1/4 tsp salt
Instructions:
Preheat: Preheat oven to 350°F / 175°C. Grease a 9×13 inch baking pan. Make Pecan Pie Filling: In a large bowl, whisk together brown sugar, corn syrup, eggs, vanilla, salt, and half of the melted butter (1/2 cup). Stir in chopped pecans. Pour: Pour the pecan filling into the greased pan and spread evenly. Dump Cake Mix: Sprinkle the dry yellow cake mix evenly over the pecan filling. Do NOT mix. Top: Drizzle the remaining 1/2 cup melted butter evenly over the cake mix. Top with whole pecans. Bake: Bake for 40-50 minutes until the top is golden brown and the center is set but still slightly gooey. Cool: Let it cool for at least 20-30 minutes before cutting. It firms up as it cools. Serve warm, just like in your photo. Great with a scoop of vanilla ice cream on top.
