Ingredients

  • 2 cups desiccated/shredded coconut
  • ½ cup sweetened condensed milk
  • 1 tsp vanilla (optional)
  • 200 g milk or dark chocolate
  • 1 tsp coconut oil (optional, for smoother chocolate)

Method

  1. Mix: Combine coconut, condensed milk, and vanilla until you get a sticky, moldable mixture.
  2. Shape: Form into small rectangular bars, as shown in the picture.
  3. Chill: Place on a lined tray and refrigerate for 30–45 minutes until firm.
  4. Melt chocolate: Melt chocolate gently in the microwave in 20-second intervals, stirring between each, or use a double boiler. Mix in coconut oil if using.
  5. Coat: Dip each chilled coconut bar completely in the melted chocolate.
  6. Set: Place back on the lined tray and refrigerate for 15–20 minutes until the chocolate hardens.

Tip: If the coconut mixture is too wet, add a little more coconut; if too dry, add 1–2 tablespoons condensed milk.
