Ingredients

For the potatoes:

  • 4 large russet or Yukon Gold potatoes

1. Prepare the potatoes
Preheat your oven to 425°F (220°C). Wash and scrub the potatoes thoroughly. You can leave the skin on for extra texture and flavor.

Slice the potatoes into rounds about ½-inch thick. Try to keep the slices as even as possible so they cook at the same rate.

2. Season the potatoes
Place the potato slices in a large bowl. Add olive oil, garlic powder, paprika, onion powder, black pepper, salt, and Italian seasoning. Toss thoroughly until every slice is evenly coated.

3. Arrange for roasting
Line a large baking sheet with parchment paper. Arrange the potato slices in a single layer, leaving a little space between them.

Roast for approximately 20–25 minutes, then carefully flip each potato slice.

4. Prepare the cheese topping
While the potatoes are roasting, combine the cheddar, Parmesan, breadcrumbs, melted butter, garlic powder, and paprika in a bowl.

Mix until everything is evenly combined.

5. Add the cheesy topping
After flipping the potatoes, sprinkle a generous amount of the cheese mixture over each potato slice.

Return the tray to the oven and bake for another 8–12 minutes, or until the cheese is completely melted, golden brown, and crispy around the edges.

6. Broil for extra crispiness
For an especially golden top, switch the oven to broil/grill for about 1–2 minutes. Watch closely because the cheese can burn quickly.

7. Serve
Remove the potatoes from the oven and let them cool for 2–3 minutes. Sprinkle with fresh parsley and serve immediately.

Mix together:

  • ½ cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • Pinch of salt
  • Freshly cracked black pepper

Serve the crispy cheesy potato slices warm with the creamy dipping sauce.
