1 cup peanut butter
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
Extra sugar for rolling

Instructions
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, beat the peanut butter, softened butter, brown sugar, and granulated sugar until creamy. Mix in the egg and vanilla extract.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
Roll the dough into small balls and coat lightly with sugar. Place them on the prepared baking sheet and gently flatten each cookie with a fork to create the classic crisscross pattern.
Bake for 10–12 minutes until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack
