Ingredients
For the Base
- 2 cups mixed nuts (almonds, peanuts, cashews, or walnuts), roughly chopped
- 1 cup raisins or dried cranberries
- 1 cup crushed biscuits or rolled oats
- 1/2 cup peanut butter or almond butter
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
For the Chocolate Topping
- 1 1/2 cups milk or dark chocolate chips
- 2 tablespoons coconut oil or butter
Instructions
1. Prepare the Pan
- Line an 8×8-inch square pan or tray with parchment paper.
2. Make the Base
- In a large bowl, combine:
- chopped nuts
- raisins
- crushed biscuits or oats
- In a small saucepan over low heat, warm:
- peanut butter
- honey
- vanilla
- salt
- Stir until smooth.
3. Combine
- Pour the warm mixture into the dry ingredients.
- Mix well until everything is coated evenly.
4. Press into the Pan
- Transfer the mixture to the prepared pan.
- Press down firmly using the back of a spoon or a flat glass.
5. Make the Chocolate Layer
- Melt the chocolate chips and coconut oil together:
- either in the microwave (30-second intervals)
- or using a double boiler.
- Stir until smooth.
6. Add Topping
- Pour melted chocolate over the base.
- Spread evenly with a spatula.
- Decorate with extra almonds or dried fruit if desired.
7. Chill
- Refrigerate for 2–3 hours until firm.
8. Slice & Serve
- Cut into bars or squares.
- Store in an airtight container in the fridge for up to 1 week.
