
Vegan Citrus Beet & Avocado Glow Salad

Ingredients
For the salad
- 2 medium cooked beets, sliced or cut into wedges
- 1 large orange, peeled and sliced
- 1 grapefruit, peeled and sliced
- 1 ripe avocado, sliced
- 2 cups arugula or mixed greens
- ¼ cup pomegranate seeds
- 2 tbsp pumpkin seeds or toasted walnuts
- 2 tbsp fresh mint or cilantro
Citrus dressing
- 2 tbsp fresh orange juice
- 1 tbsp fresh lemon juice
- 1 tbsp extra-virgin olive oil
- 1 tsp maple syrup
- 1 tsp Dijon mustard
- ½ tsp grated fresh ginger
- Salt and freshly ground black pepper, to taste
Instructions
- Make the dressing: Whisk together orange juice, lemon juice, olive oil, maple syrup, Dijon mustard, ginger, salt, and pepper.
- Build the salad: Spread the arugula over a serving platter or bowl. Arrange the beet wedges, orange, grapefruit, and avocado on top.
- Add the toppings: Sprinkle with pomegranate seeds, pumpkin seeds or walnuts, and fresh mint.
- Dress: Drizzle the citrus dressing over the salad just before serving.
- Serve immediately while the avocado is fresh and creamy.
Optional additions
- Add chickpeas for extra protein.
- Add quinoa to make it more substantial.
- Add a little vegan feta for a salty, creamy contrast.
- For a spicy version, add a pinch of chili flakes to the dressing.
Quick tip
To keep the avocado looking bright, toss it gently with a little lemon juice before adding it to the salad.
