Ingredients:
- 1 large egg
- 1 grated cauliflower head
- 1 chopped avocado
- 3/4 cup shredded mozzarella cheese
- Salt & Black pepper

Instructions:
- Set the oven to preheat at 420 F, then line the baking tray with a parchment paper
- Cook the cauliflower in the microwave on high for 7 minutes
- Allow the cauliflower to cool, then drain on a paper towel.
- Remove the excess moisture by pressing with a clean kitchen towel, then put them in a bowl.
- Add the egg and mozzarella, then stir
- Add the seasonings and mix evenly, then shape the mixture into medium squares
- Arrange the squares on the prepared baking tray.
- Allow baking until browned evenly, for about 20 minutes
- In the meantime, puree the avocado with black pepper and salt.
- Top with the pureed avocado.
- Serve!
