Ingredients
- 1 sheet puff pastry
- 2 cups spinach, chopped
- ½ cup feta cheese, crumbled
- 1 small onion, finely chopped
- 1 tbsp olive oil
- 1 garlic clove, minced
- ¼ tsp black pepper
- ½ tsp salt (adjust to taste)
- 1 egg (for brushing)
- 1 tbsp sesame or nigella seeds
Method
- Prepare filling: Heat oil in a pan. Sauté onion and garlic, then add spinach and cook until wilted. Let it cool.
- Add cheese: Mix in feta, black pepper and salt.
- Prepare pastry: Spread puff pastry on a flat surface and cut into squares.
- Fill: Place spinach mixture on each square and fold diagonally into triangles. Seal edges with a fork.
- Brush: Apply beaten egg and sprinkle sesame or nigella seeds.
- Bake: Place on a lined baking tray and bake at 200°C for 20–25 minutes, until golden and crispy.
Serving
Serve warm with garlic yogurt dip, mint chutney or ketchup.
Tip: Drain excess moisture from the spinach filling before adding it to the pastry to keep the triangles crispy!
