- 1½ cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt

- ¾ cup creamy peanut butter
- ¾ cup brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Optional Add-ins
- ½ cup chocolate chips
- ¼ cup chopped peanuts
- ½ teaspoon cinnamon
Equipment Needed
- Large mixing bowl
- Medium bowl
- Electric mixer or whisk
- Baking tray
- Parchment paper
- Cookie scoop or spoon
- Cooling rack
Instructions
Step 1: Prepare the Oven
Preheat your oven to 175°C (350°F).
Line a baking tray with parchment paper to prevent sticking and ensure even baking.
Step 2: Mix the Dry Ingredients
In a medium bowl, combine:
- Flour
- Rolled oats
- Baking soda
- Baking powder
- Salt
Whisk everything together until evenly mixed.
Step 3: Cream the Butter and Sugars
In a large mixing bowl, beat together:
- Softened butter
- Peanut butter
- Brown sugar
- Granulated sugar
Mix for about 2–3 minutes until light, fluffy, and creamy.
Step 4: Add the Egg and Vanilla
Add:
- Egg
- Vanilla extract
Beat again until smooth and fully combined.
Step 5: Combine Wet and Dry Mixtures
Slowly add the dry ingredients into the wet mixture.
Mix gently until a soft cookie dough forms. Do not overmix.
If using chocolate chips or nuts, fold them into the dough at this stage.
Step 6: Shape the Cookies
Use a cookie scoop or spoon to form small balls of dough.
Place them on the prepared baking tray, leaving space between each cookie because they spread while baking.
You can gently flatten the tops slightly with your hand or a fork.
Step 7: Bake the Cookies
Bake in the preheated oven for 10–13 minutes or until the edges become golden brown.
The centers may still look soft, but they will continue to set as the cookies cool.
Step 8: Cool the Cookies
Remove the tray from the oven and let the cookies rest for 5 minutes.
Transfer them carefully to a cooling rack and allow them to cool completely.
