Ingredients

  • 2 large sweet potatoes
  • 100g goat cheese or cream cheese
  • ½ cup walnuts, chopped
  • ⅓ cup dried cranberries
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp balsamic glaze
  • 1 tsp fresh thyme
  • ½ tsp black pepper
  • ½ tsp salt
  • Fresh rosemary for garnish

Instructions

  1. Prepare: Preheat oven to 200°C. Wash sweet potatoes and cut into thick 2cm rounds.
  2. Season: Brush both sides with olive oil, salt and black pepper.
  3. Roast: Arrange on a baking tray and bake for 20–25 minutes, flipping halfway, until tender and golden.
  4. Add cheese: Place a spoonful of goat cheese on each sweet potato round.
  5. Top: Add chopped walnuts and dried cranberries.
  6. Bake again: Return to oven for 3–5 minutes until cheese softens.
  7. Garnish: Drizzle with honey and balsamic glaze. Sprinkle fresh thyme and rosemary.

Serving

Serve warm on a platter, garnished with extra walnuts, cranberries and rosemary.

Tip: Goat cheese gives the original tangy flavour, but cream cheese or feta also works beautifully. ❤️
