Ingredients
1 lb bottom round steak, thinly sliced
2 whole bell peppers
Red and white onions, sliced thinly
Pickled jalapeños, chopped
1/2 lbs Monterey jack cheese, shredded
Trader Joe’s onion salt
Sea salt
Pepper
Avocado oil
1: Preheat oven to 350ºF.
2: Cut whole bell peppers in half and core them, then drizzle with avocado oil. Bake for 17 to 20 minutes.
3: Season steak with onion salt, pepper, and sea salt. Sear each side for 1 to 2 minutes and let it rest. Then, cut into small 1/4” to 3/8” square pieces.
4: *Preheat frying pan to medium and add avocado/olive oil once warm Cook thinly sliced onions and bell peppers for about 10 minsutes. Once done, mix together in a bowl with steak, cheese, bell peppers, onions, and jalapeños.
5: Fill bell peppers with the mixture then bake until cheese is melted.
