Ingredients:
2 cups old-fashioned rolled oats
1 1/2 cups unsweetened applesauce
2 large eggs
1 cup non-fat milk (or almond milk)
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup blueberries (or your preferred fruit like banana slices, apple chunks, or raisins)
1 tablespoon honey or maple syrup (optional)
Cooking spray (for greasing)
Instructions:
Preheat the oven to 350°F (175°C). Lightly spray an 8×8-inch baking dish with cooking spray.
In a large bowl, combine the oats, baking powder, cinnamon, and salt.
In another bowl, whisk together the eggs, milk, applesauce, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until combined.
Fold in the fruit of your choice (blueberries, apples, raisins, etc.) and mix gently.
Pour the mixture into the prepared baking dish and spread it out evenly.
If desired, drizzle a little honey or maple syrup over the top for extra sweetness.
Bake for 35-40 minutes, or until the top is golden brown and the oatmeal is set.
Let the bake cool for a few minutes before slicing. Cut it into 6-8 portions.
