Ingredients:
- 1 lb (450g) lean ground beef
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 tablespoon olive oil
- 2 tablespoons homemade taco seasoning (or store-bought low-carb version)
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1/2 cup heavy cream
- 1/4 cup unsweetened almond milk (or any low-carb milk of choice)
- Salt and pepper to taste
- Optional toppings: chopped lettuce, diced tomatoes, sliced avocado, sour cream, salsa
- Preheat your oven to 375°F (190°C). Grease a 9-inch (23cm) pie dish or use non-stick spray.
- In a large skillet, heat the olive oil over medium-high heat. Add the diced onions and bell peppers and sauté until softened.
- Add the ground beef to the skillet, breaking it up with a spatula. Cook the beef until it’s browned and fully cooked through.
- Stir in the taco seasoning, salt, and pepper, ensuring the beef mixture is well-coated with the spices. Let it cook for an additional 2-3 minutes to allow the flavors to meld. Remove the skillet from heat.
- In a separate bowl, whisk together the eggs, heavy cream, and almond milk. Season with a pinch of salt and pepper.
- Spread the beef mixture evenly in the greased pie dish. Sprinkle the shredded cheddar cheese over the beef.
- Pour the egg mixture over the beef and cheese, making sure it covers the entire surface.
- Place the pie dish in the preheated oven and bake for 25-30 minutes or until the top is golden and the eggs are set.
- Remove the pie from the oven and let it cool for a few minutes before slicing.
- Serve each slice with your favorite taco toppings, such as chopped lettuce, diced tomatoes, sliced avocado, sour cream, and salsa
