  • 1 lb (450g) lean ground beef
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • 2 tablespoons homemade taco seasoning (or store-bought low-carb version)
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup unsweetened almond milk (or any low-carb milk of choice)
  • Salt and pepper to taste

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch (23cm) pie dish or use non-stick spray.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the diced onions and bell peppers and sauté until softened.
  3. Add the ground beef to the skillet, breaking it up with a spatula. Cook the beef until it’s browned and fully cooked through.
  4. Stir in the taco seasoning, salt, and pepper, ensuring the beef mixture is well-coated with the spices. Let it cook for an additional 2-3 minutes to allow the flavors to meld. Remove the skillet from heat.

  6. Spread the beef mixture evenly in the greased pie dish. Sprinkle the shredded cheddar cheese over the beef.
  7. Pour the egg mixture over the beef and cheese, making sure it covers the entire surface.
  8. Place the pie dish in the preheated oven and bake for 25-30 minutes or until the top is golden and the eggs are set.
  9. Remove the pie from the oven and let it cool for a few minutes before slicing.
  10. Serve each slice with your favorite taco toppings, such as chopped lettuce, diced tomatoes, sliced avocado, sour cream, and salsa
