Ingredients
- For the “Tater Tots”:
- 1 head of cauliflower (about 4 cups, chopped)
- 1 cup shredded mozzarella cheese
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- For the Casserole:
- 1 lb ground beef (80% lean or higher)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup beef broth
- 1 tsp smoked paprika
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 2 cups shredded cheddar cheese
- 1 tbsp olive oil or butter for sautéing
Instructions
- Prepare the Cauliflower “Tater Tots”:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Steam the cauliflower florets until tender, about 8-10 minutes. Drain well and pat dry.
- In a food processor, pulse the cauliflower until it resembles rice. Transfer to a bowl and combine with mozzarella, Parmesan, egg, garlic powder, onion powder, salt, and pepper.
- Form small tot-shaped pieces and place them on the baking sheet. Bake for 20-25 minutes or until golden brown and crispy.
- Cook the Beef Mixture:
- Heat olive oil or butter in a skillet over medium heat. Add diced onions and cook until translucent, about 3-4 minutes.
- Add ground beef and cook until browned, breaking it up as it cooks, about 6-8 minutes.
- Stir in garlic and cook for an additional minute.

- Layer the baked cauliflower “tater tots” on top of the beef mixture.
