Ingredients for the Crust

  • 1-quart almond flour
  • 3 tbsp of coconut flour
  • 2 tbsp unsweetened cocoa powder or 1/4 cup Cacao Bliss
  • a half teaspoon baking powder
  • xanthan gum, 1/2 teaspoon
  • a quarter teaspoon of salt
  • 4 tbsp. cubed and chilled butter
  • a tsp vanilla extract

For the Filling

  • 2/3 cup sugar-free powdered sweetener
  • 3/4 cup sugar-free creamy peanut butter
  • 6 oz softened cream cheese
  • 1-quart heavy whipping cream

  • 1-gallon heavy whipping cream
  • 2 tbsp sugar-free powdered sweetener
  • a tsp vanilla extract

Directions

  • STEP 1: Preheat oven to 350°F and prepare pie plate
  1. Preheat the oven to 350°F and coat a 9-inch pie pan with cooking spray. Place aside.

  1. Combine almond flour, coconut flour, cocoa powder, baking powder, xanthan gum, and salt in a food processor. After a few pulses, add the cubed butter and vanilla extract. Pulse the mixture until coarse crumbles form.

  1. Pour the chocolate pie dough into the prepared pie plate and press evenly to cover the bottom and sides.

  1. Bake the pie crust for 9-10 minutes at 350°F. Allow to cool completely.

  1. Using an electric mixer, combine sweetener, peanut butter, and cream cheese until fluffy.
  • STEP 6 Prepare the whipped cream
  1. In a separate medium mixing bowl, use an electric mixer to whip heavy cream until stiff peaks form. Fold in half of the whipped cream until well combined. This will help the peanut butter mixture to come together. Fold in the rest of the whipped cream gently. When folding lightly, try to keep the mixture light.

  1. Place the cooled pie crust on top of the peanut butter mixture.
  • STEP 8 Prepare the whipped topping.
  1. ONE cup heavy cream, beat(electric mixer) the mixture until it begins to thicken. Add in the vanilla extract and powdered sugar. Beat until stiff peaks form.
  • STEP 9 Refrigerate
  1. Spread whipped topping on top of the peanut butter layer(evenly). For TWO hours, let pie set in the refrigerator. Sprinkle with melted chocolate and crushed peanuts.

You may use slightly sweetened with Monk Fruit, a sugar-free sweetener, unsweetened cacao powder/Cacao Bliss. Instead of Cacao Bliss, if you use unsweetened cocoa powder, make sure to get 100% unsweetened cocoa powder/raw cacao powder. Because some brands may contain added sugars. You will only need TWO tbsp in the keto pie crust because for your chocolate peanut butter pie, the unsweetened cocoa powder is quite rich . Leave out the final whipped topping to reduce the number of calories and carbs in the pie.

We haven’t used other nut butters can probably be substituted, but you may use it, so please let me know if you do.
