INGREDIENTS

KETO DANISH DOUGH

2 cups almond flour

1 tbsp baking powder

2 tsp sugar substitute (such as @lakanto)

1/4 tsp salt

2 1/2 cups mozzarella cheese, shredded

2 Oz. cream cheese

3 tbsp salted butter

1 egg

1 tsp vanilla extract

KETO CREAM CHEESE FILLING

6 Oz. cream cheese

2 tbsp sugar substitute (Lakanto)

1 egg yolk

1 tbsp heavy whipping cream

1 tsp vanilla

8 tbsp sugar free strawberry jam

EGG WASH

1 egg white, slightly beaten

1 tbsp water

DIRECTIONS

DOUGH

Preheat oven to 350°F and line a large baking sheet with parchment paper.

Combine almond flour, baking powder, sweetener, and salt in a medium bowl. Set aside.

In microwave-safe bowl, add mozzarella cheese, cream cheese, and butter. Microwave 1 min and stir. Then in 30 second intervals continue to heat until the cheese has melted and it comes together. Now mix in the egg and vanilla extract, until combined.

Add dry ingredients to the cheese mixture and mix until well combined and it forms a slightly sticky dough ball. I like to use gloves so the mix doesn’t stick to your hands.

Now split the dough into 16 even sections. Roll each piece into a flat ball and make an indent in the center of each piece. Bake for 5 minutes and then remove and let cool.

KETO CREAM CHEESE FILLING

While the dough is cooling, make the filling. Place the cream cheese, sweetener, egg yolk, heavy cream, and vanilla extract in a mixing bowl and mix with a hand or stand mixer until smooth.

ASSEMBLY

When the dough has cooled, reinforce the indents by pressing with your fingers.

Divide the cream cheese mix evenly into each danish. Place 1 1/2 tsp of sugar free jam on top of the cream cheese mixture.

Mix the egg wash ingredients together and brush the edges of each danish.

Bake for 16-18 minutes, until slightly golden brown. Check them around 10 to 12 min to avoid overcooking. Let cool slightly before eating
