Ingredients:
For the keto dough:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup psyllium husk powder
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup melted coconut oil or butter
- 4 large eggs
- 2 tbsp warm water
For the chive butter:
- 1/4 cup softened butter
- 2 tbsp chopped chives
Instructions:
- Preheat your oven to 375°F (190°C). Line an 8’x4′ baking pan with parchment paper.
- In a bowl, whisk together almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
- In a separate bowl, mix melted coconut oil (or butter) and eggs until well combined. Add the dry ingredients to the wet ingredients and stir to form a dough. Add warm water if needed to achieve a smooth dough consistency.
- Turn the dough out onto a work surface and divide it into 8 equal pieces. Roll each piece into a ball.
- In a small bowl, combine softened butter and chopped chives to make the chive butter.
- Flatten each dough ball into a small circle using a rolling pin.
- Spread about 1/2 tbsp of the chive butter in the middle of each dough circle.
- Roll the dough circles up like cigars, enclosing the chive butter inside each roll.
- Place the rolls seam-side down on the parchment-lined baking sheet.
- Cover the rolls and let them proof for about 30-45 minutes in a warm, draft-free place.
- Before baking, brush a light coating of melted butter on top of the rolls.
- Bake the rolls at 375°F (190°C) for 20-25 minutes or until they are golden brown and fully cooked.
- Let the rolls cool slightly before serving.
