For the keto dough:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup psyllium husk powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup melted coconut oil or butter
  • 4 large eggs
  • 2 tbsp warm water

For the chive butter:

  • 1/4 cup softened butter
  • 2 tbsp chopped chives

  1. Preheat your oven to 375°F (190°C). Line an 8’x4′ baking pan with parchment paper.
  2. In a bowl, whisk together almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
  3. In a separate bowl, mix melted coconut oil (or butter) and eggs until well combined. Add the dry ingredients to the wet ingredients and stir to form a dough. Add warm water if needed to achieve a smooth dough consistency.
  4. Turn the dough out onto a work surface and divide it into 8 equal pieces. Roll each piece into a ball.
  5. In a small bowl, combine softened butter and chopped chives to make the chive butter.
  6. Flatten each dough ball into a small circle using a rolling pin.
  7. Spread about 1/2 tbsp of the chive butter in the middle of each dough circle.
  8. Roll the dough circles up like cigars, enclosing the chive butter inside each roll.
  9. Place the rolls seam-side down on the parchment-lined baking sheet.
  10. Cover the rolls and let them proof for about 30-45 minutes in a warm, draft-free place.
  11. Before baking, brush a light coating of melted butter on top of the rolls.
  12. Bake the rolls at 375°F (190°C) for 20-25 minutes or until they are golden brown and fully cooked.
  13. Let the rolls cool slightly before serving.

These keto-friendly spicy chive butter rolls will have a lower carbohydrate content, making them suitable for a keto diet. They may not have the exact same texture and taste as the original recipe, but they should be a delicious keto alternative to enjoy.
