- 2 cups all-purpose flour
- 2 cups milk
- 2 large eggs
- 2 tablespoons sugar
- 2 tablespoons melted butter
- ½ cup water (as needed)
- 1 teaspoon vanilla extract (optional)
- ¼ teaspoon salt
- Butter or oil for cooking
Instructions
- Make the batter: In a large bowl, whisk together the eggs, sugar, milk, melted butter, vanilla, and salt.
- Add flour: Gradually add the flour, whisking until smooth. Add water little by little until the batter is thin and pourable.
- Rest the batter: Let it rest for 10 minutes to help create soft, tender crepes.
- Heat the pan: Lightly grease a nonstick frying pan and heat over medium-low heat.
- Cook the crepes: Pour a small ladleful of batter into the pan and swirl to spread it into a thin layer.
- Flip: Cook for 1–2 minutes until the edges lift and the bottom is lightly golden. Flip and cook for another 30–60 seconds.
- Repeat: Continue with the remaining batter, lightly greasing the pan when needed.
- Roll and serve: Allow the crepes to cool slightly, then fold or roll them as shown in the picture.
