Ingredients

  • 4 medium fresh cucumbers, thinly sliced
  • ½ small red onion, thinly sliced
  • 1 small carrot, finely diced
  • ¼ cup fresh parsley or cilantro, chopped
  • ½ cup white vinegar or apple cider vinegar
  • ¼ cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic, finely minced
  • ½ teaspoon dried oregano
  • ½ teaspoon red chili flakes, optional
  • 1 teaspoon honey or sugar, optional
  • 1 tablespoon olive oil

Instructions

  1. Prepare the vegetables: Wash the cucumbers and slice them into thin rounds. Thinly slice the red onion and finely dice the carrot.
  2. Make the dressing: In a bowl, whisk together the vinegar, water, lemon juice, salt, black pepper, minced garlic, oregano, chili flakes, and honey or sugar if using.
  3. Combine: Add the cucumber, red onion, carrot, and chopped parsley or cilantro to a large bowl.
  4. Add the dressing: Pour the vinegar mixture over the vegetables and gently toss until everything is evenly coated.
  5. Add olive oil: Drizzle in the olive oil and toss again.
  6. Marinate: Cover and refrigerate for 30–60 minutes so the cucumbers absorb the flavors.
  7. Serve: Give the salad another gentle toss before serving. Serve chilled as a refreshing side dish with grilled chicken, fish, sandwiches, or rice.
