1. Ingredients
    • 300–400 g fresh spinach
    • 4–5 garlic cloves, thinly sliced
    • 2 tbsp olive oil or butter
    • ½ tsp salt
    • ¼ tsp black pepper
    • ½ tsp chili flakes (optional)
    • 1 tsp lemon juice (optional)
    Method
    1. Wash the spinach thoroughly and drain.
    2. Heat olive oil in a large pan over medium heat.
    3. Add sliced garlic and cook for 30–60 seconds until lightly golden. Don’t burn it.
    4. Add the spinach in handfuls. It will look like a lot at first but will shrink quickly.
    5. Cook for 3–5 minutes, stirring frequently, until wilted and tender.
    6. Add salt, black pepper and chili flakes.
    7. Cook another 1–2 minutes until excess water evaporates.
    8. Turn off the heat and add a squeeze of lemon juice.
For the look in your picture: use plenty of sliced garlic and let a few pieces become lightly golden before adding the spinach. 🧄🌿
