Ingredients:
• 2 lbs russet potatoes, peeled and sliced
• 1 large onion, thinly sliced
• 3 tbsp vegetable oil
• 2 tbsp butter
• ½ tsp garlic powder
• ½ tsp paprika
• ½ tsp black pepper
• Salt, to taste
• 2 tbsp fresh parsley, chopped (optional)

Method:

1. Peel the potatoes and slice them into thin, even pieces. Rinse under cold water and pat them very dry with paper towels.
2. Heat the vegetable oil and butter in a large skillet over medium heat. Add the potatoes in an even layer and season with salt, black pepper, garlic powder, and paprika.
3. Cook for 10–12 minutes, stirring occasionally, until the potatoes begin to turn golden brown.
4. Add the sliced onions and continue cooking for another 10–15 minutes, stirring gently from time to time, until the potatoes are crispy on the outside and tender inside and the onions are golden and caramelized.
5. Taste and adjust the seasoning. Sprinkle with fresh parsley if desired and serve hot as a comforting side dish.
