- 3 cups whole wheat flour
- 1 cup all-purpose flour
- 1½ cups warm water
- 2¼ tsp instant yeast
- 1 tbsp honey
- 2 tbsp olive oil
- 1 tsp salt
- 2 tbsp sunflower seeds
- 1 tbsp flaxseeds
- 1 tbsp sesame seeds
- Extra mixed seeds for topping
Instructions
- Mix the dough: Combine warm water, yeast, and honey in a bowl. Add the flours, salt, olive oil, sunflower seeds, flaxseeds, and sesame seeds.
- Knead: Knead for 8–10 minutes until a soft, elastic dough forms. Add a little flour or water if needed.
- Let it rise: Cover and leave in a warm place for 1–2 hours, until doubled in size.
- Shape: Grease a loaf pan or two small oven-safe glass dishes. Shape the dough and place it inside. Sprinkle mixed seeds on top.
- Second rise: Cover and let rise for another 30–45 minutes.
- Bake: Preheat the oven to 375°F (190°C). Bake for 30–40 minutes, until golden brown and cooked through.
- Cool and slice: Let the bread cool for at least 20–30 minutes before slicing.
Helpful Tips
- Use whole wheat flour for extra fiber.
- Brush the top lightly with water before adding seeds so they stick.
- Store in an airtight container for 2–3 days or freeze slices for later.
